Zucchini Muffin Recipe

Umm my garden has been EXPLODING with zucchini and crookneck yellow squash! Like it's growing outside my garden box and over into my grass. So to keep up with the amazing growth I've made zucchini muffins about 4 times and froze about 4 bags of each for future.

I've tried a few different recipes for the zucchini muffins but think I've found my favorite one. I'm here to share it.

Spiced Zucchini Muffins

3 cups of flour

1 1/2 teaspoon Baking Powder

1 1/2 teaspoon Cinnamon

1 teaspoon Baking Soda

1/2 teaspoon of Nutmeg

1/2 teaspoon of salt

4 lg eggs

1 cup of packed Brown Sugar

1 cup of Sugar

1 cup of Vegetable Oil

2 teaspoon of Vanilla

3 cups of grated Zucchini


Mix together the brown sugar, granulated sugar, oil, eggs, and vanilla.





In a separate bowl, mix together the flour, baking powder, baking soda, nutmeg, cinnamon, and salt.


Then add the dry ingredients to your mixer.


 I used my Ninja to chop up the zucchini, you can also just grate it. Once you have grated or chopped up the zucchini add 3 cups to your mixer.


 Your batter will look runny because of the water in the zucchini, it's ok, it always works out.


You can either grease the pan with butter or I just lazily used Pam lol Place in the oven at 350 degrees for 25 min. I always put them in the oven for 17 min then check them, because burnt muffins are the worst. It ends up about being around 21 mins for my muffins, but the recipe says 25 mins.


Once they are done take them out and put them on a cooling rack. Hopefully your cooling rack is not as ghetto as mine...and hasn't been used over an open fire (Jeffrey!!)
